I want to first apologize for my two-month absence.
On Feb 3, 2019, my family experienced a great & tragic loss; two deaths in a tragic accident. Its been a very difficult period for me. I have spent a lot of time with my family & loved ones; healing as much as I can and trying to make sense of our new future.
Since then, I have been VERY BAD about sticking to my allergy diet and thus have been feeling like crap and paying the consequences. But, when you travel and have constant company like I have had, it's hard to remain on track, and I have a new understanding on what I need to do and how to do it.
Starting this week, I am getting my booty back into an allergy-free diet zone. I will be back full force; posting stories, videos, recipes, and much more! So, I hope you'll be back soon!

It should be a well-known fact that I make the best quiche in the world!
Seriously! I can't tell you how many times over the years I have caught my friends & family stealing my quiche. It's the bomb! So, when my new allergies made an appearance, I had a mini-meltdown. "How the hell am I going to make my quiche now?!"
Lucky me, I found an awesome allergy-free pie crust at my local Lucky's Market!
I FINALLY finished my allergy testing this week! (Phew - Ouch!) It's been 10 years since my last test and my oh my, things have changed! Watch the video below to find out how.

I cannot begin to tell you how incredibly difficult it is to find candy that I can eat with my insane food allergies! Most sweets are made with corn sugar/syrup, wheat and corn. So, when I found these amazing products at my local TJ Maxx & Marshall's stores, I was ecstatic! Also, thankful because I do love me some sweets!
These products are made with rice flour, potato starch, honey, and cane sugar! They use organic products that are nut free and gluten free! (insert happy dance!) I was apprehensive about purchasing them - how good can they really be? But holy hell - they're delicious! Like, seriously, I have to find all of these treats and hoard them all! (insert evil laugh)
I had never heard of the Lovely Candy Company but honestly, they're my new favorite! The company began when owners Jackie & Mike were looking for candy made with select ingredients; gluten and GMO free. Watch their video below to learn more about them & their incredible company! I love pizza! Actually, I desire pizza on a very deep level. It is one of my favorite dishes. So, when I had to give up corn, wheat and soy recently, I was heartbroken! I searched the internet for a pizza crust that contained rice or potato flour, as I am also allergic to nuts & coconut, and what I found was disappointing.
The rice flour recipes I tried seemed bland or too thick and gelatin like - uck! I had a hard time finding a potato flour recipe so, what did I do? I made up my own!
A few weeks ago, I found a deal on Groupon for home allergy testing. I have always been curious if these types of tests were accurate. So, when I saw the deal (like 80% off), I thought, "Let's try it!"

Today, I stepped on a scale for the first time in a couple weeks. Since Jan 1st, I have started to eliminate all the foods that I am newly allergic to; Corn & Corn Products, Wheat & Soy. Crazy enough, I've lost seven pounds!
This is so exciting! I have been struggling to lose weight in the recent past, and have gained quite a bit very quickly. I've heard that when you continue to consume foods that you are allergic or sensitive to, your weight can increase due to inflammation. And it can also make it difficult to lose weight. (Who would have thought?!)
I would love to hear from any of you that have experienced the same thing, and look forward to digging deeper into this topic!

Well, It's a been a week of DOIN MY BEST to live allergy free. I have had some frustrations; Why do 80% of all rice snacks contain sesame seeds? Why am I going through such horrible caffeine withdrawals?
Moving forward, I plan on tackling deeper topics; What are (blank) allergies? Why do they happen and how? And why does it seem allergies are becoming more prevalent? I also want to answer any questions you may have. Feel free to reach out - CONTACT.
It's not easy giving up soy, wheat, and corn products. Especially, when you're an Italian/Spanish female whose diet has always consisted of foods on the BerFOODa Triangle.
I haven't had a lot of luck with rice flour, so far. I find the texture of rice flour, specifically in pizza & tortillas, to be bland and gelatin like. But in the midst of my frustration & anger, me and Dane were able to create something else. Something, damn tasty!
